Dad Recipe: Smash Burgers
Smash Burgers are delicious. The salted crust created by the cast iron griddle is absolute perfection.
These are easily done at home to to rival any restaurant out there! Keys to success: cast iron griddle, quality beef (go for 80/20 so it’s not too lean. it makes a huge difference), thinly sliced red onion that melt into he seared meat (we’re talking razor thin) and toasted brioche buns.
I use the Big Green Egg because it’s what I know. Any grill will work great. A Stove Top will work in a pinch, but I think the convection heat of the grill is ideal.
When it comes to the cast iron: a round griddle that fits inside the egg is what you’re looking for. I use this bad boy. It’s super fun to cook sausage, bacon & eggs or a piece of fish, or take it camping!
Spatulas. Yes, they’re worth talking about because it makes a difference. I typically use a putty knife because it’s super strong and thin. However, in this case, an articulated spatula to get over the 2” lip of the griddle will be super helpful.
makes 2-3 burgers
Ingredients:
1 lb ground beef (make sure it’s 80/20 and not too lean). Separate into 4 equal balls. 6 balls if you want 3 burgers.
Red Onion SUPER thinly sliced (razor thin)
American or Cheddar Cheese
Brioche Buns
Preparation:
Heat the Big Green Egg to 450-500F
Set Cast Iron Griddle on the Egg so it comes up to temp
pro move: elevate your griddle using the plate setter or some bricks. it helps when the pan is level with the rim of the egg.
Place ground beef on the griddle. Using the press, smash the meat into a thin patty.
Once the meat develops a beautiful dark salt crust, flip.
Add the razor thin onions (like 3 or 4 slices) on top of the seared meat.
Add cheese over onions so it melts.
Once the cheese has oozed all over the burger and the griddle, remove from griddle.
Add buns to the griddle. Cook on both sides for 15-20 seconds per side. They come alive!!
